Baked brie with roasted garlic and caramelized onion

Serves 10 people

Ingredients

10 cloves garlic, peeled

Olive oil

1 lb. brie (about a 7- to 8-inch wheel); cut white layer from top

1 large yellow onion; sliced into 1/4-inch thick slices

2 Tbs. butter

1 Tbs. brown sugar

1/4 cup brandy (apricot or other light-flavored liqueurs can be substituted)

Instructions

  1. Preheat oven to 325 degrees.
  2. Put garlic cloves in small saucepan and cover with oil.
  3. Cook on medium high heat until lightly browned; strain garlic from oil.
  4. Slowly sauté onions in butter in a medium-sized pan over medium heat until onions are soft and browned on edges, about 10 minutes.
  5. Add brown sugar and brandy and mix well; cook until sugar has dissolved.
  6. Add garlic; let stand to incorporate the flavors.
  7. Place brie in the oven until it's warm and soft in the middle, about 20 minutes.
  8. Pour the garlic-onion mixture over the brie and serve.
