Baked brie with roasted garlic and caramelized onion
Serves 10 people
Ingredients
10 cloves garlic, peeled
Olive oil
1 lb. brie (about a 7- to 8-inch wheel); cut white layer from top
1 large yellow onion; sliced into 1/4-inch thick slices
2 Tbs. butter
1 Tbs. brown sugar
1/4 cup brandy (apricot or other light-flavored liqueurs can be substituted)
Instructions
- Preheat oven to 325 degrees.
- Put garlic cloves in small saucepan and cover with oil.
- Cook on medium high heat until lightly browned; strain garlic from oil.
- Slowly sauté onions in butter in a medium-sized pan over medium heat until onions are soft and browned on edges, about 10 minutes.
- Add brown sugar and brandy and mix well; cook until sugar has dissolved.
- Add garlic; let stand to incorporate the flavors.
- Place brie in the oven until it's warm and soft in the middle, about 20 minutes.
- Pour the garlic-onion mixture over the brie and serve.
