Spicy potato skins

Serves 12 people

Ingredients

16 slices bacon

16 oz. Monterey Jack cheese (with jalapeno, if desired), shredded

1 cup green onion, sliced

1 cup sour cream

1 tsp. black pepper

1 tsp. Kosher salt

Instructions

  1. Cook bacon until crispy. Scrub potatoes thoroughly, and bake in 400 degrees oven for 1 hour or until done.
  2. Allow potatoes to cool to the touch. Cut in half lengthwise.
  3. Carefully scoop out the potato, leaving 1/4-inch shell (reserve the potato for another recipe).
  4. Sprinkle the potato with salt and pepper.
  5. Add crumbled bacon and green onions, and top off with cheese.
  6. Place potato skins on a baking sheet and place under broiler until cheese melts.
  7. Potato skins may be served with sour cream, if desired.
