FOOD FOR PARTIES

Caramelized apple puffs

Serves 12 people

Ingredients

2 10-oz. pkg. frozen puff pastry shells

5 Granny Smith or other tart apples, peeled, cored, and sliced

4 Tbs. butter

3 Tbs. brown sugar (more or less, to taste)

Pinch cinnamon

1 cup apple cider

1 tsp. cornstarch

2 tsp. water

Creme fraiche or regular or low-fat vanilla ice cream or frozen yogurt

Instructions

  1. Heat the oven to 400 degrees. Bake, cool and remove the "tops" of the pastry shells according to package directions.
  2. Place butter in skillet over medium-high heat. Once the butter has almost melted, add the brown sugar and cinnamon and stir until sugar is completely dissolved.
  3. Add the apple slices, allowing apples to cook and begin to caramelize before tossing.
  4. Turn apples and cook until apples are golden on the outside and soft inside; remove apples to plate.
  5. Turn the heat to high and add the apple cider to the skillet, scraping up any browned bits of apple and sugar.
  6. Reduce the heat slightly and allow the cider and the pan juices to simmer for 1 - 3 minutes, until the sauce has reduced and thickened slightly. If you desire a thicker sauce, dissolve the cornstarch in a teaspoon of water, stir it into the sauce, and allow it to thicken for a moment.
  7. Spoon apples into baked pastry shells; pour sauce over apples; spoon a dollop of creme fraiche on the top. Or partially fill pastry shells with ice cream or frozen yogurt, spoon apples on top, and pour sauce over each apple puff pastry dessert.
