Quick summer salad
Serves 8 people

Ingredients
1 1/2 lbs. already grilled skinless boneless chicken breast (defrosted, if previously frozen)
Salt and ground black pepper to taste
4 hearts romaine lettuce
2 8-oz. packages bacon
1 lb. Brie cheese, chilled and cut into small pieces
1/2 cup chopped red onion
1 1/2 cups fresh raspberries
Raspberry-flavored salad dressing (or substitute a light vinaigrette)
Instructions
- Dice the already grilled chicken and add it to the bowl. Toss well and season with salt and pepper.
- In a large salad bowl mix lettuce, bacon , Brie, raspberries, and red onion.
- Toss the salad with raspberry dressing according to taste.
